Cool, dark and dry is the whole formula, and a fridge with a sealed jar and a desiccant pack handles it fine. Viability drops gradually rather than falling off a cliff, so five year old seed often still germinates at a reduced rate. Storage advice with rough germination expectations by age is written out at https://breederregularseeds.com. The freezer works too, but only if the seed is properly dry first, otherwise you get ice damage.
